Preparing the Beef Patty

Make the Beef Patty
In a large bowl, combine the ground beef, salt, and black pepper. Mix gently until just combined, being careful not to overwork the meat. Divide the mixture into two equal portions and shape each portion into a patty.

Sauté the Onion
In the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Add the sliced onion and sauté over medium heat until caramelized, about 8-10 minutes. Stir occasionally to prevent burning.

Grill the Sandwich
Cook the sandwich on medium heat for about 3-4 minutes on each side, or until the bread is golden brown and crispy. Press down slightly with a spatula to ensure even grilling.
Serving

Once grilled, remove the patty melt from the skillet. Cut in half if desired and serve hot with your favorite side, such as fries or a salad.
