Method

Preparing Pork Rinds

  1. 1

    Clean the Pork Skin

Begin by cleaning the pork skin thoroughly under cold running water. Remove any hair or excess fat, as this will help achieve a crispier result.

  2. 2

    Cut the Pork Skin

Using a sharp knife, cut the pork skin into small squares or strips, about 2 inches in size. This will ensure they fry evenly.

  3. 3

    Boil the Pork Skin

In a large pot, bring enough water to a boil to cover the pork skin. Add 2 tsp of salt to the water. Once boiling, add the pork skin and let it simmer for 2-3 hours until the skin is tender.

  4. 4

    Dry the Pork Skin

After boiling, drain the pork skin and place it on a baking sheet lined with paper towels. Pat them dry thoroughly to remove excess moisture.

Frying Pork Rinds

  1. 5

    Heat the Oil

In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

  2. 6

    Fry the Pork Skin

Carefully add the dried pork skin to the hot oil in batches. Fry for about 3-5 minutes until they puff up and turn golden brown. Be cautious as they may splatter.

  3. 7

    Drain and Season

Using a slotted spoon, remove the fried pork rinds and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle generously with BBQ seasoning.

Serving

  1. 8

    Prepare the Toppings

In a small bowl, heat the queso cheese until warm and melted. Prepare the sliced jalapeños as a topping option.

  2. 9

    Serve

Serve the crispy BBQ seasoned pork rinds on a platter with warm queso cheese and sliced jalapeños on the side for dipping.
