Method

Preparation of Oysters

    Shuck the Oysters

    Carefully shuck the gulf oysters and place them in a bowl. Ensure to reserve the oyster liquor.

    Prepare the Breading

    In a shallow dish, combine the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Mix thoroughly.

    Prepare the Wet Mixture

    In another bowl, whisk together the eggs and milk until well combined.

Frying the Oysters

    Heat the Oil

    In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Oysters

    Dip each oyster first into the wet mixture, then dredge them in the flour-cornmeal mixture, ensuring they are well coated.

    Fry the Oysters

    Carefully place the coated oysters into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes on each side until golden brown.

    In a small bowl, combine mayonnaise, relish, lemon juice, and Worcestershire sauce. Mix well and set aside.

    In another bowl, mix mayonnaise, ketchup, hot sauce, and Worcestershire sauce until smooth.
