    In a large bowl, pour the buttermilk over the catfish fillets. Ensure all fillets are submerged. Cover and refrigerate for at least 30 minutes.

Breading

    In a shallow dish, mix together the cornmeal, flour, paprika, garlic powder, onion powder, salt, and black pepper until well combined.

    Bread the Catfish

    Remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the breading mixture, pressing gently to ensure it adheres. Set aside on a plate.

Frying

    Heat the Oil

    In a large, heavy skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Carefully place the breaded catfish fillets in the hot oil, being cautious not to overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Use a slotted spoon to transfer the cooked catfish to a paper towel-lined plate to drain excess oil.
