Preparing the Salad Base

    Prepare the Mixed Greens

    In a large bowl, combine the mixed greens and cherry tomatoes. Rinse the greens under cold water and drain well before adding them to the bowl.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy, about 5-7 minutes. Once cooked, remove from the skillet and place on a paper towel to drain excess grease. Once cooled, chop into bite-sized pieces.

    Add Cheese and Peppers

    Sprinkle the cheddar cheese and pepperoncini peppers over the mixed greens and tomatoes in the bowl.

    Season the grilled chicken breast with salt and pepper. Preheat a grill to medium-high heat, and grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Allow it to rest for a few minutes before slicing.

    Bread and fry the chicken breast in hot oil until golden brown and cooked through, about 5-6 minutes per side. Drain on paper towels and slice.

    In a skillet over medium heat, sauté the shrimp with olive oil, salt, and pepper for about 3-4 minutes, or until they turn pink and opaque.

Making the Dressing

    Combine Ingredients

    In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until well combined.

Assembling the Salad

    Add the cooked protein of your choice (grilled chicken, fried chicken, or shrimp) on top of the salad base. Drizzle the dressing over the salad, toss gently to combine, and serve immediately.
