Preparing the Fries

    Cook the Fries

    Preheat your oven according to the instructions on the frozen French fries package. Spread the fries in a single layer on a baking sheet and drizzle with vegetable oil. Bake according to package instructions until golden and crispy.

Smoking the Pork Ends

    Prepare and Smoke the Pork

    Cut the pork belly or shoulder into 1-inch cubes. Rub the BBQ rub all over the pork pieces. Preheat your smoker and add wood chips according to the manufacturer's instructions. Place the pork cubes in the smoker and smoke for about 2-3 hours, or until they reach an internal temperature of 190°F (88°C) and are tender.

    Prepare the Queso

    In a saucepan over medium heat, combine the white cheese, cream cheese, and milk. Stir continuously until melted and smooth. Add garlic powder and diced jalapeños. Mix well and heat for an additional 2-3 minutes, then remove from heat.

    Once the fries are cooked and crispy, place them on a large serving platter. Evenly distribute the smoked pork ends over the fries. Pour the white queso generously over the pork. Drizzle BBQ sauce on top, add slices of fresh jalapeños, and sprinkle with chopped green onions.
