Pimento Cheese Preparation

Combine Cheese Ingredients
In a large mixing bowl, combine the shredded sharp cheddar cheese, softened cream cheese, and mayonnaise.

Add Flavorings
Stir in the diced pimentos, garlic powder, onion powder, salt, and black pepper until well mixed.

Chill the Pimento Cheese
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Cook the Bacon
In a skillet over medium heat, cook the applewood smoked bacon until crispy, about 6-8 minutes. Drain on paper towels.

Toast the Bread
While the bacon is cooking, toast the slices of bread until golden brown.

Spread Mayo
Spread mayo evenly on one side of each slice of toasted bread.

Assemble the Sandwich
On two slices of bread, layer the lettuce leaves, tomato slices, crispy bacon, and a generous amount of pimento cheese. Top with the remaining slices of bread, mayo side down.

Serve
Cut the sandwiches in half and serve immediately with your choice of side.
