Method
Cooking the Pasta
- 1
Boil Water
In a large pot, bring salted water to a boil over high heat.
- 2
Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
- 3
Drain Pasta
Once cooked, drain the spaghetti and set aside, reserving about 1 cup of the pasta water.
Making the Sauce
- 4
Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.
- 5
Add Beer and Aperitivo
Pour in the Miller High Life and the red aperitivo, stirring to combine. Bring the mixture to a gentle simmer.
- 6
Incorporate Tomato Paste
Add the tomato paste and stir well, allowing it to dissolve into the sauce.
- 7
Season the Sauce
Add crushed red pepper flakes, salt, and black pepper to taste. Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.
- 8
Combine with Spaghetti
Add the drained spaghetti to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
- 9
Finish with Basil and Cheese
Stir in the chopped fresh basil and sprinkle with grated Parmesan cheese just before serving.
