Fried Calamari Preparation

Prepare the Calamari

Clean the calamari by removing the head and guts. Rinse under cold water and slice the bodies into rings.

Make the Coating

In a bowl, combine the flour, cornstarch, salt, black pepper, and cayenne pepper.

Prepare the Egg Wash

In a separate bowl, beat the eggs until well combined.

Prepare the Breadcrumbs

Place the breadcrumbs in a third bowl.

Coat the Calamari

Dredge each calamari ring in the flour mixture, then dip in the egg wash, and finally coat with breadcrumbs.

Heat the Oil

In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari

Fry the calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

In a saucepan, heat the olive oil over medium heat.
