Dough Preparation

Mix the Dough
In a large mixing bowl, combine the sourdough starter, all-purpose flour, and salt. Mix well until the dry ingredients are incorporated.

Add Water and Oil
Gradually add the water and olive oil to the flour mixture. Stir until a shaggy dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes, until the dough is smooth and elastic.

First Rise
Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for 4-6 hours or until doubled in size.
Herbes de Provence Mixture

Prepare the Seasoning
In a small bowl, combine the Herbes de Provence and garlic powder. Mix well and set aside.
Cooking the Naan

Preheat the Pan
Heat a cast-iron skillet or non-stick pan over medium-high heat until hot.

Shape the Naan
Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a ball and then flatten it into a circle about 1/4 inch thick.

Season the Naan
Sprinkle the Herbes de Provence mixture onto one side of each naan and gently press it in.

Cook the Naan
Place the naan, herb side down, in the hot skillet. Cook for about 2-3 minutes until bubbles form on the surface. Flip and cook for an additional 2 minutes until golden brown.

Repeat
Repeat the process with the remaining dough, adding a little more oil to the skillet if necessary.

Serve
Remove the naan from the skillet and place on a plate. Serve warm with your favorite curry or dip.
