Preparation of Chicken

    Prepare the Chicken

    Preheat your smoker to 250°F (121°C). Rub the chicken halves with olive oil, salt, and black pepper. This will help the skin crisp up and enhance the flavor.

    Smoke the Chicken

    Place the chicken halves in the smoker and smoke for about 2 to 3 hours, or until the internal temperature reaches 165°F (74°C).

Honey-Mustard Glaze

    Make the Glaze

    In a small bowl, mix honey, Dijon mustard, apple cider vinegar, and minced garlic together until well combined. Brush this glaze over the chicken during the last 30 minutes of smoking.

Corn Nut Crumble

    Prepare the Crumble

    In a bowl, combine corn nuts, grated Parmesan cheese, smoked paprika, and salt. Use a fork to mash and mix until crumbly.

    Add to Chicken

    Sprinkle the corn nut crumble over the chicken during the last 15 minutes of smoking to allow it to adhere and toast slightly.

Pickled Fennel

    Pickle the Fennel

    In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a simmer until the sugar and salt dissolve. Add sliced fennel and remove from heat. Let it cool, then refrigerate for at least 1 hour before serving.

White BBQ Sauce

    Prepare the Sauce

    In a mixing bowl, combine mayonnaise, apple cider vinegar, honey, black pepper, and salt. Stir until smooth and well combined. Refrigerate until ready to serve.
