Preparing the Marrow Bones
Roasting the Bones
Preheat your oven to 450°F (230°C). Place the marrow bones on a baking sheet, cut side up. Sprinkle with salt and black pepper.
Roasting Time
Roast the bones in the preheated oven for about 15-20 minutes, or until the marrow is bubbling and starting to brown.
Making the Chimichurri Sauce
Combine Ingredients
In a medium bowl, combine the chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.
Mixing
Stir well until all ingredients are combined. Let the chimichurri sit for at least 10 minutes to allow the flavors to meld.
