Pasta Dough Preparation

Mixing the Dry Ingredients
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center.

Kneading the Dough
Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Preparing the Mushrooms
Clean and chop the oyster mushrooms into small pieces.

Fazzoletti Assembly

Rolling the Dough
Roll out the rested dough into thin sheets using a pasta machine or a rolling pin.

Cutting the Pasta
Cut the sheets into squares or rectangles, about 4 inches in size.

Filling the Pasta
Place a small spoonful of filling in the center of each square. Fold the pasta over to create a triangle and press the edges to seal.

Cooking the Fazzoletti
In a large pot of salted boiling water, cook the filled fazzoletti for 3-4 minutes until they float to the surface.

Making the Sauce
While the pasta is cooking, melt 3 tablespoons of truffle butter in a saucepan. Add salt to taste and chopped fresh parsley.

Drain the cooked fazzoletti and toss them gently with the truffle butter sauce. Serve immediately.
