Prepare the Special Sauce

    Mix the Sauce Ingredients

    In a medium bowl, combine the mayonnaise, ketchup, Dijon mustard, pickle relish, garlic powder, and onion powder. Stir until well mixed and set aside.

Prepare the Patties

    Form the Burger Patties

    In a large bowl, combine the ground beef, salt, and black pepper. Mix gently with your hands until just combined. Divide the mixture into two equal portions and form each into a patty, making them slightly larger than the burger buns.

    Smash the Patties

    Heat a cast iron skillet or griddle over medium-high heat. Once hot, add the burger patties and press down firmly using a spatula to create a 'smash' effect. Cook for about 2-3 minutes until a crust forms.

    Flip and Add Cheese

    Flip the patties and immediately place two slices of American cheese on each patty. Cook for an additional 1-2 minutes until the cheese is melted and the patties reach the desired doneness.

Assemble the Burgers

    While the patties are cooking, slice the burger buns and prepare the onions and pickles.

    Spread a generous amount of special sauce on the bottom half of each bun. Place a cheeseburger patty on top, followed by a few slices of onion and pickles. Top with the other half of the bun.
