Melt the Chocolate

In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whip the Egg Yolks

In a separate bowl, whisk the egg yolks and granulated sugar together until pale and thick. Add the melted chocolate mixture and vanilla extract, mixing until fully combined.

Beat the Egg Whites

In another clean bowl, whip the egg whites with a pinch of salt until soft peaks form. Carefully fold the beaten egg whites into the chocolate mixture in three additions, being gentle to maintain the volume.

Chill the Mousse

Once everything is well combined, spoon the mousse into serving glasses. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
