Preheat the Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with 2 tablespoons of unsalted butter and dust with 2 tablespoons of all-purpose flour.

Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and 0.5 cups of unsalted butter. Heat in the microwave in 30-second intervals until melted and smooth. Stir well and set aside to cool slightly.

Combine Dry Ingredients

In a large mixing bowl, sift together 1.75 cups of all-purpose flour, 2 cups of granulated sugar, 0.75 cups of unsweetened cocoa powder, 1.5 tsp of baking powder, 1 tsp of baking soda, and 0.5 tsp of salt.

Mix Wet Ingredients

In another bowl, whisk together 2 eggs, 1 cup of whole milk, 0.5 cups of vegetable oil, and 2 tsp of vanilla extract until well combined.

Combine Wet and Dry Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

Add Boiling Water

Slowly stir in 1 cup of boiling water to the batter, mixing until smooth. The batter will be thin but this is normal.

Baking the Cake

Bake the Cake

Divide the batter evenly between the two prepared cake pans. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean (be careful not to touch the molten center).

Assembling and Serving

Cool and Assemble the Cake

Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, turn them out onto a wire rack to cool completely.

Serve

To serve, place one cake layer on a plate, add a generous amount of the molten chocolate mixture from the center, and top with the second layer. Dust with powdered sugar if desired and enjoy!
