Crust Preparation

Prepare the Oven

Preheat your oven to 325°F (160°C).

Make the Crust

In a medium bowl, combine the graham cracker crumbs and granulated sugar. Melt the unsalted butter and mix it into the crumb mixture until it resembles wet sand.

Press and Bake

Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 10 minutes. Remove and let cool.

Mix Cream Cheese

In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Sour Cream

Gradually add the granulated sugar, mixing until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

Incorporate Eggs

Add the eggs, one at a time, mixing on low speed after each addition until just combined. Do not overmix.

Pour into Crust

Pour the cream cheese filling over the cooled crust in the springform pan.

Bake

Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.

Cool

Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Remove and cool to room temperature, then refrigerate for at least 4 hours or overnight.

Topping Preparation

Prepare Berries

Rinse the fresh mixed berries under cold water and pat dry with a paper towel.

Dust with Sugar

In a small bowl, toss the berries with powdered sugar and let sit for 10 minutes to macerate.

Serve

Once the cheesecake is chilled, remove from the springform pan and top with the macerated berries before serving.
