Preparation
Preheat the Oven
Preheat your oven to 450°F (232°C). This high temperature is essential for roasting the marrow bones to perfection.
Prepare the Bones
Place the beef marrow bones upright in a roasting pan. Make sure the marrow is exposed at the top. Season the bones generously with sea salt and black pepper.

Roast the Bones
Put the roasting pan in the preheated oven and roast the bones for about 15-20 minutes, or until the marrow is bubbling and has started to brown on top.

Chop Parsley
While the bones are roasting, chop the fresh parsley and set it aside for serving.
