Method
Preparation
Prepare the Beef Tartare
In a bowl, combine finely chopped beef tenderloin, egg yolk, capers, shallot, Dijon mustard, Worcestershire sauce, salt, and black pepper. Mix well until combined. Adjust seasoning to taste.
Make the Spruce Mignonette
In a small bowl, combine red wine vinegar, finely chopped spruce tips, shallot, and salt. Stir well and let it sit for 10 minutes to allow flavors to meld.
Prepare the Cocktail Sauce
In another bowl, mix together ketchup, grated horseradish, lemon juice, and hot sauce. Adjust hot sauce to your preferred level of spiciness.
Shuck the Oysters
Carefully shuck the West Coast oysters, taking care to keep the oyster liquor in the shells. Arrange the oysters on a serving platter.
Serving
Assemble the Dish
Place a small spoonful of beef tartare on each oyster. Drizzle with spruce mignonette and serve with cocktail sauce on the side.
