  1. 1

Preheat the oven to 400°F (205°C). Line a rimmed baking sheet with foil for easier cleanup and place a wire rack on top if you have one. Arrange the 8 slices of thick-cut bacon in a single layer on the rack or directly on the foil without overlapping. Put the sheet on the middle oven rack and bake for 15–22 minutes, depending on how crispy you like it (about 15–17 minutes for chewy, 20–22 minutes for crispy). Check at 12–15 minutes to avoid burning. When done, transfer bacon to a plate lined with paper towels to drain and rest 2–3 minutes.

  2. 2

If using bacon - stovetop method

Place a large skillet over medium heat. Lay the 8 slices of bacon in the skillet without overlapping. Cook 4–6 minutes on the first side until edges start to brown, then flip and cook 3–5 minutes more until desired crispness. Adjust heat down if bacon is browning too quickly. Transfer to paper towels to drain and rest 2–3 minutes.

  3. 3

Preheat the oven to 400°F (205°C). Place 8 breakfast sausage links on a rimmed baking sheet lined with foil or parchment, spaced evenly. Bake 18–22 minutes, turning once halfway through, until internal temperature reaches 160°F (71°C) and the exterior is browned. Remove from oven and let rest 2–3 minutes.

  4. 4

Heat a skillet over medium heat and add the 8 sausage links. Cook for 12–16 minutes, turning frequently so all sides brown evenly and the internal temperature reaches 160°F (71°C). If sausages begin to brown too fast, reduce heat to medium-low and cover for a couple minutes to finish cooking through. Remove and rest 2–3 minutes.

Optional finishing & serving

  1. 5

If serving with buttered toast or a side, spread 1–2 tbs softened butter on toast while hot so it melts.

  2. 6

If you like sweet-savory, drizzle about 1–2 tsp maple syrup over the cooked bacon or serve syrup on the side for dipping sausage.

  3. 7

Offer hot sauce on the side (about 1 tsp per serving) for guests who prefer a spicy kick.

  4. 8

Plate 2 slices of bacon or 2 sausage links per person (recipe amounts yield 4 servings). Serve immediately while hot.
