Taco Filling

Method

Prepare Taco Filling

1

Marinate the Fish

In a medium bowl, combine olive oil, lime juice, salt, and pepper. Add yellowtail fish fillets and toss to coat. Allow to marinate for 15 minutes.

2

Cook the Fish

Preheat a grill or grill pan over medium-high heat. Cook the marinated yellowtail fillets for about 3-4 minutes on each side, or until cooked through and flaky. Remove from heat and flake the fish with a fork.

3

Warm the Tortillas

While the fish is cooking, warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side until pliable.

Make Guacamole

4

Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

Mash the avocados with a fork until smooth or chunky, depending on your preference. Stir in lime juice, minced garlic, salt, and chopped cilantro until well combined.

Assemble Tacos

6

Fill the Tacos

Place a generous amount of flaked yellowtail fish onto each warm tortilla.

7

Top with Guacamole and Toppings

Spoon guacamole over the fish, and top with sliced jalapeños, chopped cilantro, and radishes.

8

Serve

Serve immediately while warm and enjoy your Yellowtail Crunchy Tacos!
