Prepare Lobster Filling

Cook Lobster

If using live lobsters, steam or boil them for about 8-10 minutes until they turn bright red. Remove from heat and let cool. If using pre-cooked lobster, skip this step.

Remove Lobster Meat

Once cooled, remove the lobster meat from the shells and chop it into bite-sized pieces.

Mix Filling

In a medium bowl, combine the lobster meat, mayonnaise, chopped celery, lemon juice, salt, black pepper, and fresh chives. Mix gently until well combined. Adjust seasoning to taste.

Prepare Rolls

Butter the Rolls

Melt the butter in a small saucepan over low heat. Brush the melted butter generously on the outside of each hot dog roll.

Toast the Rolls

Heat a skillet over medium heat and place the buttered rolls in the skillet. Toast for about 2-3 minutes on each side until golden brown.

Assemble the Lobster Rolls

Fill the Rolls

Once the rolls are toasted, carefully spoon the lobster filling into each roll.

Serve

Serve the lobster rolls immediately, garnished with additional chives if desired.
