Prepare Chicken

Cut the chicken breast into strips and set aside.

Make the Batter

In a mixing bowl, combine flour, cornstarch, baking powder, salt, black pepper, and paprika. In another bowl, whisk together eggs and buttermilk. Gradually mix the wet ingredients into the dry ingredients until combined.

Heat the Oil

In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it's hot enough for frying.

Batter and Fry

Dip each chicken strip into the batter, allowing excess to drip off. Carefully place the strips into the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and cooked through, about 4-5 minutes per side.

Drain and Serve

Remove the chicken strips from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with kettle chips and your choice of sauces.
