Prepare glass

    Rim (optional)

    If you like a salted rim, rub a lime wedge around the outer edge of a chilled coupe or rocks glass and dip the rim lightly into salt. Set glass aside.

Mix cocktail

    Fill a cocktail shaker about two-thirds full with ice.

    Add 2 oz reposado tequila, 0.5 oz Aperol, 0.75 oz fresh lime juice, 0.5 oz agave or simple syrup, 1 oz fresh pineapple juice, and 2 dashes orange bitters to the shaker.

    Secure the shaker lid and shake vigorously for 12–15 seconds until the shaker is very cold and well-chilled (this also slightly dilutes the drink, balancing the spirits and juices).

    Double-strain the cocktail into the prepared chilled coupe or a rocks glass filled with fresh ice, using both the shaker strainer and a fine mesh strainer to remove small ice shards and any pulp.

Finish & serve

    Garnish with a pineapple leaf or a thin pineapple wedge and a lime wheel or wedge on the rim. Serve immediately.

    Taste and adjust: if you prefer it sweeter, add a short splash (0.25 oz) of agave; if brighter, a few drops more lime juice.
