Prepare the Grits
In a medium saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt.

Cook the Grits
Gradually whisk in 1 cup of grits. Reduce heat to low and cover. Cook for about 20-25 minutes, stirring occasionally, until thickened.

Finish the Grits
Stir in 2 tablespoons of butter and 1 cup of cheddar cheese until melted and creamy. Set aside.
For the Shrimp

Marinate the Shrimp
In a bowl, combine 1 pound of shrimp with 2 tablespoons of olive oil, 2 minced garlic cloves, 1 teaspoon paprika, 1 teaspoon cayenne pepper, 1 teaspoon black pepper, and 2 tablespoons of lemon juice. Mix well and let it marinate for 15 minutes.

Grill the Shrimp
Heat a grill or grill pan over medium-high heat. Add the marinated shrimp and grill for about 2-3 minutes on each side or until they are pink and cooked through.

Prepare the Spicy Sauce
In a small saucepan, melt 1 tablespoon of butter over medium heat. Stir in 2 tablespoons of hot sauce, 1 tablespoon of honey, and 1 teaspoon of lemon zest. Cook for 2-3 minutes until heated through.
Assembly

Serve the Dish
Spoon the creamy grits onto plates, top with grilled shrimp, and drizzle with the spicy sauce. Serve immediately.
