For the Ribeye Steak

    Prepare the Steak

    Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes before cooking.

    Season the Steak

    Pat the steaks dry with a paper towel. Rub both sides with olive oil, then season generously with salt, black pepper, garlic powder, and fresh rosemary.

    Preheat the Grill

    Preheat your grill to high heat, around 450-500°F (232-260°C).

    Grill the Steak

    Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or adjust cooking time according to your preferred doneness.

    Rest the Steak

    Remove the steaks from the grill and let them rest for about 5-10 minutes before slicing.

For the Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel and quarter the Yukon Gold potatoes. Place them in a large pot and cover with cold water.

    Boil the Potatoes

    Bring the water to a boil over high heat. Once boiling, add 1 tsp of salt and reduce the heat to medium. Cook the potatoes for about 15-20 minutes or until fork-tender.

    Cook the Garlic

    While the potatoes are cooking, peel and mince the garlic cloves. In a small saucepan, melt 2 tbs of butter over medium heat and sauté the minced garlic for about 2-3 minutes until fragrant.

    Mash the Potatoes

    Drain the cooked potatoes and return them to the pot. Add the sautéed garlic with butter, remaining butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Garnish and Serve

    Stir in chopped chives for added flavor and serve the garlic mashed potatoes alongside the grilled ribeye steak.
