Method

Prepare the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix olive oil, salt, black pepper, and lemon juice. Add salmon fillets to the marinade, ensuring they are well-coated. Let marinate for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F or 190°C).

Make the Dill Sauce

  1. 3

    Combine Ingredients

In a mixing bowl, combine Greek yogurt, chopped dill, minced garlic, lemon juice, and salt. Mix well until smooth. Chill in the refrigerator until ready to serve.

Prepare the Vegetables

  1. 4

    Season the Vegetables

In a large bowl, toss the asparagus, sliced bell peppers, and zucchini with olive oil, salt, and black pepper until evenly coated.

  2. 5

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Grill the Salmon

  1. 6

    Grill the Salmon

Place the marinated salmon fillets on the preheated grill. Grill for about 6-8 minutes per side, or until the salmon flakes easily with a fork and has nice grill marks.

Serve

  1. 7

    Plate the Dish

Once the salmon and vegetables are grilled, remove them from the grill. Serve the salmon with a generous dollop of dill sauce on top, accompanied by grilled seasonal vegetables on the side.
