Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out moisture.

Set Up Breading Station
In one bowl, add the buttermilk. In a second bowl, combine the flour, cornmeal, black pepper, cayenne pepper, and salt. Mix well.

Bread the Tomatoes
Dip each tomato slice into the buttermilk, allowing excess to drip off, then coat in the flour mixture, pressing lightly to ensure even coverage.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Tomatoes
Carefully place the breaded tomato slices into the hot oil in batches. Fry for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.
Shrimp Remoulade

Mix the Remoulade
In a mixing bowl, combine the mayonnaise, Dijon mustard, Worcestershire sauce, hot sauce, and lemon juice. Mix until smooth.

Add Vegetables and Shrimp
Fold in the finely chopped celery and green onions. Then add the cooked shrimp, and season with salt and black pepper. Mix gently to combine.
Assembly

Plate the Dish
On a serving plate, layer the fried green tomatoes and generously top with the shrimp remoulade. Garnish with additional green onions if desired.
