Add Tomatoes and Seasonings
Stir in the crushed tomatoes, oregano, basil, salt, pepper, and sugar. Bring to a simmer and cook for about 15-20 minutes, stirring occasionally.

Finish and Keep Warm
Once the sauce thickens slightly, remove from heat and keep warm while preparing the calamari.
Preparing the Calamari

Marinate Calamari
In a bowl, soak the calamari rings in buttermilk for at least 30 minutes. This will help tenderize the calamari.

Mix Dry Ingredients
In another bowl, combine the flour, cornstarch, salt, pepper, paprika, and garlic powder. Mix well.

Heat Oil
In a deep frying pan or pot, pour in the vegetable oil to a depth of about 2 inches. Heat the oil over medium-high heat until it reaches 375°F (190°C).

Coat the Calamari
Remove the calamari from the buttermilk and shake off excess. Dredge the calamari rings in the flour mixture, ensuring they are evenly coated.

Fry the Calamari
Carefully drop the coated calamari into the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the crispy fried calamari hot with the marinara sauce on the side for dipping.
