Chocolate Mousse

Whipped Cream

Method

Chocolate Mousse

  1. 1

    Melt the Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

  2. 2

    Prepare the Egg Mixture

In a separate bowl, separate the egg yolks from the egg whites. Beat the egg yolks with granulated sugar and vanilla extract until pale and creamy.

  3. 3

    Combine Chocolate with Egg Yolks

Once the chocolate mixture has cooled slightly, pour it into the egg yolk mixture and mix until well combined.

  4. 4

    Whip Egg Whites

In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. This can take about 3-5 minutes.

  5. 5

    Fold in the Egg Whites

Gently fold the whipped egg whites into the chocolate mixture in two additions, being careful not to deflate the egg whites.

  6. 6

    Chill the Mousse

Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.

Whipped Cream

  1. 7

    Prepare the Whipped Cream

In a chilled mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium speed until soft peaks form, about 2-4 minutes.

  2. 8

    Serve

Once the mousse has set, serve it topped with a dollop of whipped cream. Optionally, you can garnish with chocolate shavings or berries.
