Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until the crumbs are evenly coated.

Form the crust
Press the crumb mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 8-10 minutes until golden brown. Remove from oven and allow to cool.

Prepare the filling
In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add granulated sugar, mixing until well combined.

Add remaining ingredients
Add sour cream, vanilla extract, and flour to the cream cheese mixture. Mix until just combined. Add eggs one at a time, mixing on low speed until each egg is incorporated before adding the next.

Pour into crust
Pour the filling into the cooled graham cracker crust, smoothing the top with a spatula.

Bake the cheesecake
Bake in the preheated oven for 55-70 minutes, or until the center is set and slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Cool and chill
Remove the cheesecake from the oven and allow it to cool completely at room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight, before serving.
