    Prepare the mixture

    In a large mixing bowl, combine the boudin sausage, cooked rice, chopped green onions, eggs, salt, black pepper, and cayenne pepper. Mix well until all ingredients are thoroughly combined.

    Form the balls

    Using your hands, form the mixture into small balls about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

    Coat the balls

    Set up a breading station: Place the flour in one bowl, beaten egg in another, and breadcrumbs in a third bowl. Roll each ball first in flour, then dip it in the egg, and finally coat it with breadcrumbs. Make sure each ball is evenly coated.

    Fry the boudin balls

    In a large heavy pot or deep fryer, heat vegetable oil to 350°F (175°C). Fry the boudin balls in batches, making sure not to overcrowd the pot, until they are golden brown and cooked through, about 4-5 minutes per batch. Remove them with a slotted spoon and drain on paper towels.

    Mix the ranch dressing

    In a medium-sized bowl, whisk together the mayonnaise, sour cream, buttermilk, garlic powder, onion powder, dried dill, salt, and black pepper until the mixture is smooth and creamy.

    Cover the bowl with plastic wrap and refrigerate the ranch dressing for at least 30 minutes to allow the flavors to meld.
