Make the Blackening Seasoning
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Mix well and set aside.

Prepare the Remoulade Sauce
In a medium bowl, mix together mayonnaise, Dijon mustard, chopped capers, chopped parsley, lemon juice, and hot sauce. Stir until fully combined and refrigerate until ready to serve.
Cooking the Fish

Preheat the Pan
Heat a large cast-iron skillet over medium-high heat until it is very hot, about 5 minutes.

Season the Fish
Rub the olive oil over both sides of each redfish fillet. Generously sprinkle the blackening seasoning on both sides of the fillets.

Plate the Dish
Remove the cooked redfish from the skillet and place on a serving plate. Top each fillet with a generous dollop of the zesty remoulade sauce.

Garnish and Serve
Serve the blackened redfish immediately with additional lemon wedges and your choice of sides such as rice or roasted vegetables.
