Preparation of Catfish

Prepare the Spice Mixture
In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, black pepper, and salt.

Season Catfish
Rub the spice mixture evenly over both sides of each catfish fillet.

In a large skillet, heat the olive oil over medium-high heat until it shimmers.

Add the seasoned catfish fillets to the skillet and cook for about 4-5 minutes on each side, or until the fish is blackened and cooked through.

Rinse the Rice
Rinse the long-grain white rice under cold water until the water runs clear to remove excess starch.

In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.

In a small saucepan, combine the canned black beans (drained and rinsed), cumin, garlic powder, and olive oil over medium heat.

Cook the beans for about 5-7 minutes, stirring occasionally, until heated through. Season with salt to taste.
