Chill glass
Place the serving glass in the freezer for 5–10 minutes, or fill with ice water while you prepare the cocktail to ensure the glass is cold and will 'rotate' visually when served.

Add aged rum, orange curaçao, fresh lime juice, honey syrup, ginger liqueur, and Angostura bitters to a cocktail shaker.

Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and you feel dilution on the shaker surface.

Discard the ice or water from the chilled serving glass. Add 3 fresh ice cubes to the glass.

Double-strain the cocktail into the chilled glass over the ice using a Hawthorne strainer and a fine mesh strainer (this keeps small shards of ice and pulp out for a cleaner presentation).

Express the oils from the orange twist over the surface of the cocktail by holding the twist skin-side down about 2–3 inches above the drink and giving it a quick snap so oils spray onto the drink; then rim the glass with the twist and drop it in or perch it on the edge.

Float or clip the lime wheel on the rim or the edge of the glass for color contrast.

If desired, grate a small amount of fresh nutmeg or ginger over the top (very light) to add aromatic lift.

To create the 'Rotating Glass' table-side effect: hand the chilled glass by its stem or base and rotate it slowly before presenting to the guest so the condensation pattern and garnish placement catch the light. If you prefer a subtle flourish, spin the glass once and set it gently on the coaster in front of the guest.
