Prepare Glass

Optional salt rim

If you want a salted edge, rub a grapefruit wedge or lime around the glass rim, then dip the rim into a shallow plate of coarse salt. Set the glass aside.

Pour 0.25 oz mezcal into the prepared serving glass, swirl to coat the inside, then pour out any excess. This creates a smoky rinse that complements the Blanco tequila.

Mixing the Cocktail

Add 2 oz blanco tequila, 0.5 oz blanco mezcal, 0.5 oz agave syrup, 0.75 oz fresh lime juice, 0.5 oz fresh grapefruit juice, and 2 dashes orange bitters into a cocktail shaker.

Fill the shaker with ice (about 1 cup) and cap. Shake vigorously for 12–15 seconds until the shaker is well-chilled and slightly frosted.

Double-strain the mixture (through a Hawthorne and a fine mesh strainer if available) into the mezcal-rinsed serving glass over a large ice cube, or into the prepared glass filled with fresh ice.

Express the oils of a grapefruit twist over the drink by holding the twist skin-side down above the cocktail and giving it a quick snap. Run the twist around the glass rim and drop it into the drink (or float a grapefruit wheel).
