Build and stir

Place a mixing glass or shaker (without ice) and measure in 2 oz High West Double Rye, 0.5 oz Metaxa, 0.5 oz Campari and 0.25 oz mastiha liqueur. Add 2 dashes of bitters. If you prefer a touch more sweetness to balance the Campari and mastiha, add 0.25 oz simple syrup.

Add ice and chill

Fill the mixing glass with large ice cubes (or one large sphere). Stir gently but thoroughly for 25–30 seconds until the mixture is well chilled, slightly diluted, and the glass is frosty on the outside.

Strain

Using a julep or Hawthorne strainer, strain the cocktail into an Old Fashioned glass over a single large ice cube or sphere.

Garnish & finish

Express the oil from an orange peel over the surface of the drink by holding the peel skin-side down above the glass and giving it a firm squeeze to release the citrus oils. Rub the peel around the rim and drop it into the glass.

Optionally, if you have mastiha resin, press a tiny flake onto the orange peel or float a small sprig of thyme on the ice to accentuate the herbal mastiha note. Serve immediately.
