Method

Prep - Grape leaf & olive brine

    Make brine

    Combine 1/4 cup water, 1/4 cup good-quality olive brine (from jarred olives), 1 tsp white wine vinegar, and a small pinch (about 1/8 tsp) of sea salt in a small jar. Add one rinsed pickled grape leaf. Shake and refrigerate for at least 30 minutes. Measure 1/2 oz from this mixture for the cocktail.

    If you don't have pickled grape leaves, substitute by adding 1/4 tsp finely chopped brined grape leaf or 1/8 tsp preserved lemon for a similar savory note.

Prep - Seeded spice blend

    Lightly toast coriander and fennel seeds in a dry skillet over medium heat until fragrant, 1–2 minutes, tossing constantly to avoid burning. Let cool, then lightly crush with the back of a spoon or mortar and pestle to release oils. Combine with cracked black pepper and sea salt. Place the blended seeds on a small plate for rimming and finishing.

Prep - Paprika oil

    Warm the neutral oil gently (microwave 10–12 seconds or stovetop over low heat) until barely warm. Whisk in the smoked paprika until evenly suspended. Let cool. The oil can be made ahead and stored refrigerated for up to 3 days; bring to room temperature before using.

Mixing the Cocktail

    Chill a coupe or Nick & Nora glass by filling with ice and setting aside, or place in the freezer for a few minutes.

    Prepare the glass rim: wipe a thin film of the grape leaf & olive brine along the outer edge of the glass rim using a folded paper towel or dampened lemon twist. Lightly press the outer rim into the seeded spice blend so a thin crust adheres. (Alternatively, apply the blend to a small plate and roll the rim.)

    Fill a mixing glass with plenty of ice. Add 2 oz Stray Dog Gin, 1/2 oz dry vermouth, and 1/2 oz grape leaf & olive brine. Stir gently and steadily for 20–30 seconds until well chilled and properly diluted.

    Discard ice from the chilled serving glass. Fine-strain the stirred cocktail into the prepared glass to avoid picking up any crushed spice particles.

    Using a small spoon or dropper, place three small droplets of paprika oil on the surface of the cocktail, spacing them evenly. If desired, use a toothpick to gently swirl the droplets into a subtle pattern without overmixing (you want aromatic contrast, not full incorporation).

Garnish & Finish

    Float the pickled grape leaf folded once on the surface or rest it against the glass edge. Spear the cocktail olive on a short pick and rest it on the rim or lay inside the drink. If using, express the lemon twist over the drink and discard or place at the rim for a bright top note.

    Serve immediately, noting the interplay of saline grape-leaf brine, herbal gin, warm seeded spice on the rim, and the smoky paprika oil aroma.
