Combine and dissolve sugar

In a small bowl or measuring cup, combine 0.25 cups whole milk and 1 tablespoon granulated sugar. Stir until the sugar is mostly dissolved (about 30 seconds).

Add cream and flavor

Whisk in 0.25 cups heavy cream, 0.25 teaspoon vanilla extract, and a pinch of salt until fully combined. Taste and adjust vanilla or sugar very slightly if needed.

Chill mixture

Cover the mixture and chill in the refrigerator for at least 15 minutes (or up to 1 hour) to ensure it’s cold — cold base yields a smoother scoop.

Freeze to firm (quick method)

If you have an ice cream maker: follow your machine’s instructions for a very small batch (machine may require at least 1/2 cup; see manufacturer guidance). If you don’t have a machine: pour the chilled mixture into a small shallow metal or glass container and place it in the freezer. After 20–30 minutes, stir vigorously with a fork or whisk to break up ice crystals; repeat every 15–20 minutes until mostly firm (about 1–2 hours total) to achieve a scoopable texture.

Soften before scooping

Once firm, remove from freezer and let sit at room temperature for 2–3 minutes so the surface softens slightly for a clean scoop. For very hard freeze, let sit up to 5 minutes but not long enough to melt.

Scoop and serve

Use a warmed ice cream scoop or a spoon dipped in hot water and wiped dry to form a single generous scoop (approximately 1/2 cup). Place the scoop in a chilled bowl or cone.

Add mix-ins

If using mix-ins, stir them into the base during the last churn/stir cycle (if using the no-machine freeze-stir method, fold in 2 tablespoons chocolate chips or chopped chocolate, or 1 tablespoon crushed cookie pieces when the mixture is partially firm but still workable). This prevents them from sinking to the bottom.

Garnish and finish

Top the scoop with 1 teaspoon caramel or chocolate sauce and/or 1 tablespoon fresh berries or a mint leaf. Serve immediately.
