Seared Sesame Tuna Salad

In a medium saucepan combine 4 cups water, granulated sugar and brown sugar over medium heat. Stir until sugars fully dissolve and mixture comes to a gentle simmer. Add molasses and stir to incorporate. Remove any foam with a spoon. Simmer 5 minutes to meld flavors, then remove from heat.

Make the simple syrup

If using caramelized sugar for color, stir it into the hot syrup until evenly distributed. Allow syrup to cool slightly (5–10 minutes).

Stir in vanilla extract and the optional preservative (sodium benzoate solution or citric acid) while warm so they disperse evenly.

Place sarsaparilla, sassafras (or substitute), wintergreen, licorice, anise, coriander, allspice, star anise, dried orange peel, sliced ginger, crushed cardamom and the split vanilla bean into a small heatproof bowl or tea infuser bag. If using whole spices, lightly crush coriander, allspice and cardamom to release oils.

Prepare botanicals

Pour about 2 cups of the hot syrup base over the botanicals so they are fully submerged. Cover and let steep for 30–40 minutes off the heat. For a deeper flavor, steep up to 1 hour.

After steeping, strain the infused syrup through a fine-mesh sieve lined with cheesecloth into a clean saucepan or bowl, pressing gently on solids to extract flavors. Discard solids.

Taste the concentrated syrup. Adjust brightness with a pinch more citric acid or a teaspoon of lemon juice if it feels too sweet or flat. If a stronger wintergreen or anise note is desired, add up to 1/4 tsp wintergreen oil (very small amounts — potent). Stir well.

This results in a concentrated root beer syrup. For final beverage dilution, a good starting ratio is 1 part syrup to 4 parts cold water; adjust to taste between 1:3 and 1:5 depending on desired sweetness and intensity.

In a large pitcher combine the concentrated syrup and 8 cups of cold filtered water using a 1:4 ratio (2 cups syrup + 8 cups water) or adjust as preferred. Stir gently to combine. Chill the mixed root beer thoroughly in the refrigerator until cold (at least 2 hours).

Dilute and chill

If using a home carbonator (SodaStream or counter-top carbonator) or a keg system: follow manufacturer instructions to carbonate the chilled root beer to medium-high fizz. If using a soda siphon, work in batches per device capacity.

Carbonate (forced CO2)

If you do not have forced CO2, dissolve the priming sugar in a tablespoon of hot water, cool slightly and stir into the chilled diluted root beer. Immediately fill sanitized bottles, leaving 1–1.5 inches headspace, cap tightly and store at room temperature for 24–48 hours to build carbonation. Refrigerate after reaching desired carbonation to slow fermentation and preserve flavor.

Bottle conditioning (optional)

For long-term storage, keep bottles refrigerated. Serve very cold over ice. Garnish with a slice of orange if desired.

Combine granulated sugar, brown sugar and 1 cup water in a small saucepan over medium heat. Stir until sugars fully dissolve and mixture just reaches a simmer (do not boil vigorously). Remove from heat once sugar is dissolved and liquid is clear and slightly amber, about 4–6 minutes.

Make Simple Syrup

Allow the simple syrup to cool for 10 minutes. Stir in caramel color, vanilla extract, coca flavoring (or substitute), orange oil, lime juice and orange juice. Mix thoroughly so oils and extracts incorporate into the syrup. If using powdered caffeine, dissolve it now into a tablespoon of the warm syrup to ensure even distribution, then stir back into the batch.

Add Flavor Components

Add the phosphoric acid solution (or diluted phosphoric acid measure) to the syrup and stir. Taste cautiously — phosphoric acid is sharp; you want a bright tang reminiscent of cola but not an overpowering sour. Adjust with an additional 1/8 tsp water or 1/8 tsp sugar if needed.

Acid Balance

Let the completed syrup cool to room temperature. Transfer to a clean glass container with a lid. The concentrated syrup can rest in the refrigerator for up to 2 weeks.

Cool and Rest

Chill glass bottles and club soda thoroughly. Clean bottles and caps with hot water and a mild sanitizer if reusing bottles.

Prepare Bottles

For this recipe scale (yields about four 12 oz servings): add 2 tablespoons (30 ml) of the prepared syrup to each 12 fl oz bottle. Alternatively, combine 1/4 cup (60 ml) syrup with 12 fl oz cold club soda for an easy open-pitcher method. Pour cold club soda or highly carbonated soda water into the bottle or glass slowly to preserve carbonation and minimize foaming. Stir gently or cap and invert gently once to mix — avoid vigorous shaking.

Dilute Syrup to Make Cola

Taste one bottle. If you prefer sweeter, add 1/2 teaspoon simple syrup or 1/8 tsp sugar dissolved in a few drops of warm water. If you want brighter acidity, add an additional 1/16 tsp lime juice or a tiny prick of phosphoric acid solution (use sparingly). Mix gently after adjustments.

Fine-Tune Sweetness & Acidity

If serving immediately, fill a glass with ice, pour the bottled Mexican-style cola over ice, garnish with a lime wedge. If bottling for later, fill bottles leaving 1/2 inch headspace, cap tightly and refrigerate. Note: Because carbonation was introduced via club soda rather than force-carbonation, do not expect additional carbonation to develop in the bottle; consume chilled within 3–5 days for best flavor and fizz.

Roll the lemons on the countertop firmly to loosen juices. Zest one lemon to yield about 1 teaspoon of zest, then cut lemons and squeeze until you have 1 cup of fresh lemon juice. Strain the juice through a fine mesh sieve into a measuring cup to remove seeds and pulp.

Juice and Zest

If using granulated sugar: in a small bowl, combine 3 tablespoons granulated sugar with 1/4 cup warm water and stir until sugar is fully dissolved to make a quick sugar solution. If using simple syrup, skip this step and use the syrup measure from the optional section.

Dissolve Sugar (or Use Simple Syrup)

In a 1.5–2 quart pitcher, combine the 1 cup strained lemon juice, the dissolved sugar solution (or 3 tbs simple syrup), and the freshly grated lemon zest. Add 3 cups cold water and stir thoroughly to combine. Taste and adjust sweetness or dilution: add up to 1/2 cup more water if too tart, or up to 1–2 tablespoons more sugar/syrup if too tart.

Mix Lemonade

Add 2 cups ice to the pitcher or dispense ice into individual glasses. Pour the lemonade over ice. If you prefer a slightly fizzy finish, top each glass with sparkling water (about 1/4 cup per glass) just before serving.

Chill and Serve

Garnish each glass with a lemon slice on the rim and 2 fresh mint leaves. For a brighter aroma, clap mint between your palms before adding to release oils.

To make a pitcher of sparkling lemonade: replace up to 1 cup of the cold water in the recipe with sparkling water and add it right before serving to preserve bubbles.

Place over medium heat and stir until the sugars dissolve and the mixture comes to a gentle simmer. Do not boil vigorously. Simmer for 3–4 minutes to fully meld, stirring occasionally.

Remove from heat and stir in 1 teaspoon caramel color (or a tablespoon of homemade caramel) to reproduce the deep color. Allow the syrup base to cool slightly while you prepare the flavor concentrate.

If using dried cherry, place 1 tablespoon in a small bowl and cover with 2 tablespoons hot water; steep 5 minutes and then mash lightly and strain, reserving the liquid. Alternatively use 1 tablespoon cherry concentrate or 1 teaspoon maraschino cherry syrup.

Prepare Flavor Infusion

To a small bowl or directly into the warm syrup, add 1 teaspoon vanilla extract, 1/8 teaspoon almond extract, 1/4 teaspoon crushed star anise (or a pinch of anise), 1/8 teaspoon ground cinnamon, 1/16 teaspoon ground nutmeg, 1/16 teaspoon ground clove, and 1/16 teaspoon ground allspice. Add 1 tablespoon fresh lemon juice and 1/2 teaspoon orange zest. If you prepared cherry liquid, add it now (or add the maraschino cherry syrup).

Whisk these flavor ingredients into the warm syrup base so the extracts and spices bloom in the heat. Taste carefully: the concentrate should be noticeably aromatic and slightly stronger than you'd want in the finished drink (it will be diluted by carbonated water). Adjust small amounts of almond or cherry if you want a stronger cherry or nutty note.

Allow the combined syrup and flavor concentrate to cool to room temperature. Strain through a fine mesh sieve or coffee filter to remove any solids or spice fragments to achieve a smooth soda syrup.

Chill 4 cups (about 1 liter) of cold carbonated water. For each 8-oz (240 ml) serving glass, use 2–3 tablespoons of the prepared syrup (about 30–45 ml) depending on sweetness preference. For the provided quantities (syrup above makes roughly 2 cups/480 ml), mix about 4 cups carbonated water with 1/2 to 3/4 cup syrup to taste, or mix per-glass as preferred.

Assemble the Dr. Pepper-style Soda

Fill serving glasses with ice to taste. Pour the measured syrup over the ice, then gently add cold carbonated water to preserve carbonation. Stir once gently to combine — avoid vigorous stirring which will flatten the soda.

Garnish each glass with 1–2 maraschino cherries and a lemon or lime wedge if desired. Serve immediately chilled.

Store any leftover syrup in an airtight jar in the refrigerator for up to 2 weeks. Shake or stir before using; proportion syrup to carbonated water to taste when serving later.

While the syrup is still warm, stir in 1.5 tsp citric acid, 2 tbsp fresh lemon juice, 2 tbsp fresh lime juice, 1 tsp vanilla extract, and 2 tbsp cold water (if you want slightly looser consistency). Stir until the citric acid fully dissolves.

Cool and store: Allow the syrup to cool to room temperature, then refrigerate in a sealed container. The syrup keeps for up to 2 weeks refrigerated.

Prepare glass: Fill a highball or Collins glass with 1 cup of ice cubes.

Measure syrup: Add 2 tablespoons of the prepared lemon-lime syrup into the glass. Taste and adjust: if you prefer a sweeter, more intense lemon-lime flavor, increase to 2.5–3 tbsp; for lighter, use 1–1.5 tbsp.

Add carbonation: Slowly pour 10 oz chilled carbonated water over the back of a spoon or down the inside of the glass to preserve bubbles. Stir gently once with a long spoon 2–3 times to integrate.

Garnish and serve: Squeeze the lime wedge over the drink if desired, drop it in as garnish, and serve immediately with a straw.

Open a cold 12 fl oz can or bottle of Diet Coke. Pour it slowly into the glass over the ice, tilting the glass slightly to preserve carbonation and reduce foaming.

If using, squeeze the lime wedge lightly over the top of the soda (about 1/2 teaspoon fresh lime juice) and drop the wedge into the glass. Clap the mint sprig between your palms once to release aroma and rest it on top as a garnish.

Optional lime and mint

Serve immediately with a straw or stirring stirrer. Enjoy while the drink is cold and fizzy.

Fill a tall glass with ice cubes, leaving a little room at the top so the soda won't overflow when poured.

Measure 2 fl oz cola syrup and pour it into the bottom of the prepared glass.

Slowly pour 12 fl oz chilled carbonated water down the side of the glass onto the syrup to preserve carbonation and encourage gentle mixing. Pouring over the back of a spoon helps reduce foaming.

Give the drink one or two gentle stirs with a long spoon to incorporate the syrup evenly without flattening the soda.

Taste the soda and adjust sweetness or flavor if desired. Add a splash more cola syrup (about 0.25–0.5 fl oz) for a sweeter, stronger cola flavor, or add a squeeze of fresh lime for brightness.

Garnish with a lime wedge on the rim or dropped into the glass. Serve immediately while fizzy.

Pour 8 cups of water into a pot or kettle and bring just to a rolling boil over high heat.

Remove the pot from heat. Add 4 black tea bags (or the loose-leaf equivalent) to the hot water. Cover and let steep 5 to 7 minutes for a robust brew (3 to 4 minutes for a lighter tea).

Allow the brewed tea to cool at room temperature for 15 to 20 minutes before refrigerating. This prevents cloudiness and helps preserve flavor.

If you prefer sugar, combine 1 cup granulated sugar with 1 cup hot water in a heatproof measuring cup or small saucepan. Stir until the sugar fully dissolves to make a 1:1 simple syrup. Cool slightly.

If using honey instead of sugar, warm 1/2 cup honey with 1/2 cup hot water and stir until combined, or stir honey directly into the still-warm brewed tea so it dissolves evenly. Adjust quantity to taste.

Once the brewed tea is warm (not piping hot), stir in the desired amount of simple syrup or honey to taste. Start with 1/4 cup syrup per 8 cups of tea and adjust. Taste and add more if you prefer sweeter iced tea.

Sweeten the tea

Stir 1/2 cup fresh lemon juice into the cooled, sweetened (or unsweetened) tea. Taste and add more if you like a brighter citrus note.
