Make a dark roux
In a heavy-bottomed Dutch oven over medium heat, combine 1 cup vegetable oil and 1 cup all-purpose flour. Stir constantly with a wooden spoon or whisk to form a smooth paste. Reduce heat to medium-low as the roux darkens. Continue stirring frequently for 25–35 minutes until the roux reaches the color of milk chocolate (careful not to burn). If small lumps form, keep stirring and cooking — they will smooth out. Remove from direct heat momentarily if it threatens to scorch.
Once the roux is dark and fragrant, stir in 2 tablespoons unsalted butter to add gloss and richness. Slowly whisk in 6 cups chicken stock a ladle at a time to deglaze and thin the roux, stirring vigorously to incorporate and prevent lumps. Return pot to medium heat.
Add 2 bay leaves to the pot and bring the mixture to a gentle simmer. Taste and keep warm while you prepare the rest of the gumbo base.

In a separate large skillet over medium-high heat, add the sliced andouille sausage (12 oz). Sear for 3–4 minutes until browned and some fat renders. Transfer sausage (and any flavorful drippings) into the pot with the roux and stock.
In the same skillet, add the chopped yellow onion (1.5 cups), green bell pepper (1 cup), and celery (1 cup). Sauté for 6–8 minutes until softened and lightly caramelized. Add the minced garlic (4 cloves) and cook 30–60 seconds more until fragrant. Transfer the cooked vegetables and any fond into the gumbo pot, stirring to combine.
Stir in sliced green onions (from 4 stalks) and 1/4 cup chopped parsley into the gumbo. Simmer the combined mixture gently for 20 minutes to meld flavors.

Season the chicken pieces (1 lb) lightly with 1/2 teaspoon salt and a pinch of black pepper. In the skillet used before, add a drizzle of oil if needed and brown the chicken pieces over medium-high heat for 4–5 minutes just to develop color; they do not need to be fully cooked. Add the browned chicken to the gumbo pot.
Reduce gumbo heat to a low simmer and cook for 25–30 minutes, partially covered, until chicken is tender and flavors concentrate. Skim any excess fat from the surface if desired.
About 8 minutes before serving, stir in 1 lb peeled and deveined shrimp. Simmer 4–6 minutes until shrimp turn pink and opaque. Add 8 oz lump crab meat in the final 2 minutes only, gently folding it in to warm through without breaking up the lumps.
Seasonings & Finishing
Throughout cooking, season the gumbo with 1.5 teaspoons salt, 1 teaspoon freshly ground black pepper, 2 teaspoons Cajun/Creole seasoning, 1 teaspoon smoked paprika, 1 teaspoon dried thyme, and 1/4 teaspoon cayenne pepper (adjust to heat preference). Stir in 1 tablespoon Worcestershire sauce. Taste and adjust salt, heat, or acidity as needed.
If using, remove bay leaves, then finish the gumbo with 1 teaspoon filé powder or an extra splash of Worcestershire/hot sauce to taste. Stir in additional chopped parsley and sliced green onions reserved for garnish.
To Serve
Ladle gumbo over cooked long-grain white rice (about 1 cup rice per person; 4 cups cooked total) into bowls. Top each serving with additional chopped parsley and sliced green onions. Serve with lemon wedges on the side to squeeze over individual bowls.
Gumbo can be made a day ahead — flavors deepen overnight. Reheat gently, adding a splash of stock if it becomes too thick. Add shrimp and crab only when reheating to avoid overcooking.
