Method
Prep the eggplant
Trim and cut
Wash the eggplant and trim off the stem. Cut the eggplant into 1/2-inch thick sticks: first slice the eggplant lengthwise into 1/2-inch slabs, then cut each slab into 1/2-inch-wide sticks. Aim for uniform size so they cook evenly.
Sweat to remove bitterness
Arrange the sticks in a single layer on a tray or baking sheet. Sprinkle the coarse salt evenly over the sticks and let them sit for 15–20 minutes. This draws out excess moisture and any bitterness.
Rinse and dry
After sweating, rinse the eggplant sticks lightly under cold water to remove the excess salt. Pat them very dry with paper towels or a clean kitchen towel. Removing surface moisture helps the breading stick and prevents oil splatter.
Make the breading station
Flour bowl
Place the all-purpose flour in a shallow dish or plate. Season the flour lightly with a pinch of the fine salt and a few grinds of black pepper if desired.
Egg wash
In a second shallow bowl, whisk the 2 large eggs with 2 tablespoons of milk until smooth and slightly frothy. This helps the breadcrumbs adhere.
In a third shallow bowl combine the breadcrumbs, grated Parmesan, dried Italian seasoning, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Mix thoroughly.
Bread the eggplant sticks
Working in batches to avoid overcrowding, dredge each eggplant stick first in the flour, shaking off excess, then dip into the egg wash, letting excess drip back into the bowl, and finally press into the breadcrumb mixture to coat all sides. Place breaded sticks on a wire rack set over a baking sheet. Repeat until all sticks are breaded.
For extra-crispy coating (optional), double-dip: after the first breadcrumb coat, return to the egg wash and then recoat with breadcrumbs.
Fry the eggplant sticks
Heat the oil
Pour about 1/2 to 3/4-inch depth of neutral oil into a large heavy skillet or a Dutch oven (about 1.5–2 cups). Heat over medium-high heat until the oil reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with one breadcrumb; it should sizzle and brown steadily but not burn.
Fry in batches
Carefully add breaded eggplant sticks in a single layer without overcrowding (4–6 sticks depending on pan size). Fry for about 2–3 minutes per side, turning gently with tongs, until golden brown and crisp. Maintain oil temperature between 325–350°F (160–175°C); reduce heat slightly if the coating browns too quickly.
Drain and rest
Use a slotted spoon or tongs to transfer cooked sticks to a wire rack set over a baking sheet or to paper towels to drain briefly. While still hot, sprinkle with a little fine salt. Repeat frying with remaining sticks.
Finish and serve
Plate the fried eggplant sticks on a serving platter. Sprinkle with chopped fresh parsley and serve with lemon wedges and your choice of dipping sauce (marinara or aioli). Serve immediately for best crispness.
If holding for a short time, keep cooked sticks in a single layer on a wire rack in a 200°F (95°C) oven for up to 15–20 minutes to retain crispness.
