Salad Base
Prepare lettuce and vegetables
Wash and dry the romaine lettuce thoroughly. Chop or tear into bite-sized pieces until you have about 6 cups. Halve the cherry tomatoes and thinly slice the cucumber if using. Place lettuce, tomatoes and cucumber into a large salad bowl.
Add cheese and croutons
Add 3 tablespoons shaved or grated Parmesan and 1 cup croutons to the bowl. Toss lightly to combine just before dressing to keep croutons crisp.
Caesar Dressing
Make dressing
In a small bowl or jar, combine 1 cup mayonnaise, 2 tablespoons Greek yogurt, 2 tablespoons fresh lemon juice, 1 teaspoon Dijon mustard and 1 teaspoon Worcestershire sauce. Add 2 finely minced anchovy fillets (if using) and 1 grated garlic clove. Whisk until smooth.
Chicken (choose fried or grilled)
Prepare chicken
If breasts are thick, butterfly them or pound gently to an even thickness (~3/4 inch) so they cook evenly. Season both sides with 1 teaspoon salt and 1/2 teaspoon black pepper.
Grilled chicken option
Preheat a grill or grill pan to medium-high heat (about 400°F / 200°C). Brush chicken with 1 tablespoon olive oil. Grill chicken 4–6 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C) and juices run clear. Transfer to a cutting board and let rest 5 minutes, then slice thinly against the grain.
Fried chicken option (crispy)
Set up a dredging station: flour in one shallow dish, beaten egg in a second, breadcrumbs/panko in a third. Dredge each seasoned breast in flour, shake off excess, dip in egg, then press into breadcrumbs to coat evenly. Heat about 1/2 cup vegetable oil in a large skillet over medium heat until shimmering (about 350°F). Add breaded breasts and fry 3–5 minutes per side (depending on thickness) until golden brown and cooked through to 165°F. Transfer to a wire rack or paper towel-lined plate to rest 5 minutes; slice thinly.
Alternate quick pan-seared option
For a lighter pan-sear: heat 1 tablespoon olive oil in a skillet over medium-high heat and sear breasts 5–7 minutes per side until cooked through, then rest and slice.
Assembly
Place the prepared salad base (lettuce, tomatoes, cucumber, croutons, and 2 tablespoons of the Parmesan) in the large bowl. Add about 1/3 to 1/2 cup of the Caesar dressing, then toss gently to coat evenly. Start with less dressing and add more to taste so salad is lightly but evenly coated.
Arrange sliced chicken over the top of the dressed salad. Sprinkle remaining Parmesan and additional freshly cracked black pepper to taste.
Serve immediately so croutons remain crisp. Offer extra dressing on the side.
