Method
Sandwich
Prepare roll
Slice the 6-inch French roll lengthwise, leaving a small hinge if you prefer. Spread butter lightly on the cut interior surfaces.
Toast roll
Heat a skillet over medium heat. Place the buttered roll cut-side down and toast until lightly golden, about 1–2 minutes. Remove and set aside.
Make sauce
In a small bowl, mix mayonnaise and Creole mustard (and hot sauce if using) until smooth.
Assemble sandwich
Spread the mayo-mustard on both cut sides of the toasted roll. Layer 4 oz thinly sliced roast beef evenly on the bottom half, then add the sliced andouille sausage. Top with provolone slice. Season tomato slices with a pinch of salt and pepper, then add tomatoes, shredded lettuce, and pickle slices. Close the roll and press gently. Cut in half if desired.
Optional warming
If you prefer the sandwich warm and the cheese melted, wrap the assembled sandwich in foil and heat in a 350°F (175°C) oven for 5–7 minutes before serving.
Optional Sandwich Add-ins
Add pickled jalapeños or an extra drizzle of hot sauce to taste either before or after warming the sandwich, depending on desired heat level.

Sauté aromatics
In a small saucepan over medium heat, melt 1 tsp butter. Add the diced onion, carrot, and celery and sauté until softened, about 4–5 minutes.
Make roux
Sprinkle 1 tsp flour over the softened vegetables and cook, stirring, for 1 minute to remove the raw flour taste.
Add liquids and chicken
Slowly whisk in 2 cups chicken broth until smooth. Add the shredded cooked chicken. Bring to a gentle simmer and cook 5 minutes to let flavors meld.
Finish soup
Stir in 2 tbsp heavy cream, salt, and black pepper. Taste and adjust seasoning. If desired, sprinkle chopped fresh parsley just before serving. Keep warm until ready to serve with the sandwich.
Salad (choice)
Combine mixed greens, cucumber slices, cherry tomatoes, and red onion in a bowl. In a small jar or bowl whisk olive oil, red wine vinegar, salt, and pepper. Drizzle dressing over salad and toss gently to coat. Serve chilled alongside the sandwich.
