Steak Preparation

    Prepare the Steak

    Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes before cooking. This helps them cook evenly.

    Season the Steaks

    Pat the steaks dry with paper towels. Rub both sides of each steak with olive oil, then generously season with kosher salt and black pepper. Make sure to cover the edges of the steak as well.

    Prepare the Grill

    Preheat your charcoal grill to high heat. Allow the charcoal to become covered with white ash, which indicates it's ready for cooking.

    Add Aromatics

    Once the grill is ready, place the sprigs of fresh rosemary and crushed garlic cloves directly on the grill grates to infuse the steak with flavor.

    Grill the Steaks

    Place the seasoned steaks on the grill. For medium-rare, grill for about 4-5 minutes on each side, adjusting time as necessary for your desired doneness.

    Rest the Steak

    After grilling, remove the steaks from the grill and let them rest for 5-10 minutes on a cutting board. This allows the juices to redistribute throughout the meat.
