    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onions, diced carrots, and diced celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Incorporate Remaining Vegetables

    Add the diced zucchini, chopped green beans, and canned diced tomatoes (with juices) to the pot, stirring to combine.

    Add Broth and Beans

    Pour in the vegetable broth and add the drained cannellini beans. Bring the mixture to a boil.

    Season the Soup

    Once boiling, season with salt, black pepper, and Italian seasoning. Reduce heat and let simmer for 15 minutes.

    Add Pasta

    Stir in the pasta and continue to simmer for an additional 10 minutes or until the pasta is cooked al dente.

    Finish with Greens

    Stir in the fresh spinach and chopped basil, cooking for another 2-3 minutes until the spinach is wilted.

    Serve the Soup

    Ladle the minestrone soup into bowls and serve hot. Optionally, garnish with additional fresh basil or grated Parmesan cheese.
