Fruit Base
Prepare fruit
Wash, hull or peel, and roughly chop the fruit. If using citrus as the primary flavor, zest 1 citrus fruit and use the juice plus water to equal 4 cups of total fruit liquid.
Purée
Place the chopped fruit in a blender or food processor with the 2 tablespoons lemon juice. Purée until completely smooth, about 45–90 seconds. If you prefer a seed-free sorbet (e.g., raspberries), press the purée through a fine-mesh sieve into a bowl, using the back of a spoon to help extract juice and discard seeds.
Simple Syrup
Make syrup
Combine 1 cup sugar and 1 cup water in a small saucepan. Warm over medium heat, stirring until the sugar fully dissolves. Bring just to a simmer and remove from heat. Allow the syrup to cool to room temperature (about 15–20 minutes).
Adjust sweetness
Taste the fruit purée and add the cooled simple syrup gradually until the mixture tastes slightly sweeter than you want the finished sorbet (sorbet dulls slightly when frozen). Aim for balanced fruit brightness with a touch of sweetness — usually 3/4 to 1 cup syrup will be sufficient depending on fruit sweetness.
Combine & Chill
Combine
Stir the cooled simple syrup into the fruit purée. Add the pinch of salt and the optional zest. If using vodka, stir it in now (it helps keep the sorbet from freezing rock-hard).
Chill
Cover the mixture and refrigerate until thoroughly chilled, at least 2 hours or up to overnight. Chilling improves texture and lets flavors meld.
Freeze
Churn (ice cream maker)
Follow your ice cream maker's instructions. Pour the chilled mixture into the machine and churn until it reaches a soft-serve consistency, usually 20–30 minutes depending on your machine and recipe volume.
No churn (freezer method)
Pour the chilled mixture into a shallow metal or glass pan. Freeze for 30–45 minutes, then stir vigorously with a fork or whisk to break up forming ice crystals. Repeat stirring every 30 minutes for 2–3 hours until the sorbet is evenly frozen and smooth. This mimics churning and produces a finer texture.
Firm up
Transfer the churned sorbet to an airtight container, smoothing the top. Press a piece of parchment directly on the surface to minimize ice crystals, then seal. Freeze for an additional 1–2 hours for a scoopable, firmer texture.
