Prepare sprouts
Trim the stem ends of the Brussels sprouts and remove any yellow or loose outer leaves. Cut larger sprouts in half lengthwise so all pieces are roughly uniform (quarters if very large). Rinse and pat dry thoroughly — excess moisture will prevent crisping.
Cook pancetta
Place a large skillet (preferably cast-iron or heavy-bottomed) over medium heat. Add the diced pancetta and cook, stirring occasionally, until the fat is rendered and the pancetta is crisp and golden, about 6–8 minutes. Use a slotted spoon to transfer the crisped pancetta to a paper-towel-lined plate, leaving the rendered fat in the skillet.
Sear sprouts
Increase heat to medium-high. Add 1 tablespoon of olive oil to the skillet with the rendered pancetta fat if needed (you should have roughly 1–2 tablespoons of fat + oil combined). Add the prepared Brussels sprouts cut-side down in a single layer. You may need to work in two batches to avoid crowding. Let them sear undisturbed until the cut sides are deeply browned and caramelized, about 4–6 minutes.
Toss & season
Once the cut sides are browned, stir or flip the sprouts and continue to cook, stirring occasionally, until tender when pierced with a fork, about another 4–5 minutes. Season with 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper, adjusting to taste. If you cooked in batches, return all sprouts to the skillet now.
Finishes & sauces
Deglaze with red wine vinegar
Remove the skillet from direct heat for about 10 seconds to reduce spatter. Return to medium heat and pour in 1 tablespoon red wine vinegar to deglaze, scraping up the browned bits from the pan with a wooden spoon. Let the vinegar simmer and reduce for 30–60 seconds until it is mostly evaporated and coats the sprouts lightly.
Add pancetta & glaze
Stir the crisped pancetta back into the skillet to rewarm and distribute. Drizzle 2 tablespoons balsamic glaze over the sprouts and toss to coat. If the balsamic glaze is very thick or sharp, whisk 1 teaspoon honey into it before adding, or add 1/2 tablespoon fresh lemon juice to brighten the flavor. Cook for an additional 30–60 seconds so the glaze becomes slightly tacky and clings to the sprouts.
Finish & serve
Taste and adjust seasoning with additional salt or pepper if needed. Transfer the sizzled Brussels sprouts to a serving dish, sprinkle with chopped fresh parsley (optional), and, if desired, finish with an extra drizzle of balsamic glaze for presentation. Serve immediately while hot and crisp.
