Prepare roll

Split the hoagie roll lengthwise, leaving a hinge if desired. Lightly toast the interior under a broiler or in a skillet for 1–2 minutes until just golden; this helps prevent sogginess. Brush the inside of both cut sides with 1 tsp extra-virgin olive oil.

Spread 2 tablespoons pesto aioli evenly on the bottom half of the toasted roll.

Place the 3 slices of provolone on top of the pesto aioli in a single overlapping layer.

Meats

Layer the meats on top of the provolone: start with the 3 oz ham, then the 2 oz calabrese salami, and finish with the 2 oz prosciutto. Arrange so meats overlap and create even coverage along the length of the roll.

Vegetables & Pickles

Toss together 1 cup shredded iceberg lettuce, the 1 medium sliced tomato, 3 tbsp thinly sliced red onion, and 2 tbsp sliced Mama Lil's peppers in a small bowl. Drizzle with 1 tbsp red wine vinaigrette and gently toss to coat.

Pile the dressed vegetable mix over the layered meats, distributing evenly.

Sauces & Final Seasoning

Lightly season the top of the vegetables with 1 tsp salt and 1 tsp freshly ground black pepper, distributing evenly. Close the sandwich by folding the top half of the roll over.

If desired, press the sandwich gently for 30–60 seconds to compress and meld flavors. Cut the grinder in half on the diagonal and serve immediately.
