Classic Deviled Eggs Base
Hard boil eggs
Place 12 large eggs in a single layer in a large pot and cover with cold water by about 1 inch. Bring to a gentle boil over medium-high heat. Once boiling, cover the pot, remove from heat, and let sit for 11 minutes. Prepare an ice bath (large bowl with ice and water). After 11 minutes, transfer eggs to the ice bath and cool 10 minutes to stop cooking and make peeling easier.
Peel and halve
Gently crack the shells and peel each egg under running water if needed. Dry eggs, then slice each egg lengthwise and carefully remove the yolks into a medium mixing bowl. Arrange the egg white halves on a serving tray or plate and set aside.
Make filling
Mash the yolks with a fork until crumbly. Add 1 cup mayonnaise, 2 tablespoons Dijon mustard, 1 teaspoon white wine vinegar, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon smoked paprika, 2 tablespoons minced chives, and 2 tablespoons sweet pickle relish (if using). Mix until smooth and creamy. Taste and adjust seasoning — add more mustard for tang or more mayo for creaminess.
Pipe or spoon filling
Transfer the yolk mixture to a piping bag fitted with a star or round tip, or use a zip-top bag with a corner snipped. Pipe or spoon an even amount of filling into each egg white half. Smooth or swirl tops as desired. Lightly dust with extra smoked paprika and sprinkle remaining chives.

Assemble skewers
Thread 1 cherry tomato, 1 basil leaf (folded if large), and 1 mini mozzarella ball onto a toothpick or small skewer. Repeat for all 18 skewers.
Dress skewers
Arrange the Caprese skewers beside or gently pressed into the deviled egg platter. Drizzle with 2 tablespoons extra-virgin olive oil, season with 1 teaspoon kosher salt (lightly across skewers), and finish with a light drizzle of 1 tablespoon balsamic glaze over the skewers and a tiny touch on a few deviled eggs if desired.
Mexican Street Corn Salad Topping (Select 1 option)
Cook corn
If using fresh corn, remove kernels from 3 ears. If using frozen, fully thaw and drain. Heat 1 tablespoon unsalted butter in a large skillet over medium-high heat. Add the corn and cook, stirring occasionally, until lightly charred in spots, about 6–8 minutes. Remove from heat and let cool 5 minutes.
Mix salad
In a bowl combine the charred corn, 1 tablespoon Mexican crema (or sour cream), 2 tablespoons mayonnaise, zest of 1 lime and 1 tablespoon lime juice, 1 tablespoon crumbled cotija cheese, 1 teaspoon chili powder, 2 tablespoons chopped cilantro, and 1 teaspoon salt. Stir until well combined and taste; adjust lime, salt, or chili powder as needed.
Portion onto eggs
Spoon a small mound (about 1 tablespoon) of the Mexican street corn salad onto each piped deviled egg half, or serve the salad in a bowl alongside the deviled eggs for guests to add as they like. Garnish each topped egg with an extra pinch of chili powder and a sprinkle of cotija and cilantro.
Serve
Arrange the deviled eggs topped with the corn salad on a platter, sprinkle with additional cilantro and a light dusting of chili powder, and serve warm or at room temperature.
Garnishes & Serving
Finish and present: After choosing either the Caprese skewers or the Mexican street corn salad topping, add final garnishes—additional chives, a light dusting of smoked paprika on untopped eggs, and microgreens or small basil leaves around the platter. Keep deviled eggs chilled until 15 minutes before serving. Makes 24 deviled egg halves; serve on a chilled platter or with ice underneath a shallow dish for parties.
